Banana Chocolate Chip Muffins Fast and Easy Recipe

Every single weekend I have a craving to bake or cook something sweet and unpretentious, but at all costs tasty.

This week I had a bunch of ripe bananas and I thought some muffins were the perfect match.

Some good chocolate was all I needed and as I was lacking the chocolate chips I grated a bar of good quality dark chocolate and the result didn’t dissapoint me at all.

Here are some photos during the process and the recipe below. All you need is 10 minutes to prepare and 25 minutes patience while the muffins are born.

Ingredients
  1. ½ cup of vegetable oil
  2. 2 eggs
  3. ½ cup of sugar
  4. 3 medium very ripe mashed bananas
  5. ¼ tsp of vanilla extract
  6. 1 2/3 cup of all purpose flour
  7. 1 tsp baking powder
  8. ½ tsp of baking soda
  9. ¼ tsp of salt
  10. ¼ tsp of cinnamon
  11. 1 cup of chocolate chips
Instructions
  1. Preheat your oven to 400 degrees (200 C).
  2. Line a 12 muffin tin with muffin liners and set aside.
  3. In a small bowl combine the chocolate chips and 3 tbsp of flour and mix until all the chocolate chips are coated in the flour.
  4. In a large bowl add the wet ingredients: vegetable oil, eggs, sugar, bananas, vanilla extract (first 5 ingredients) and mix until well combined.
  5. In a separate large bowl mix the dry ingredients: flour, baking soda, baking powder, salt, cinnamon and whisk until all combined.
  6. Whisk the two mixtures then fold in the chocolate chip mixture.
  7. Using a large ice cream scoop or a spoon divide the batter equally into the muffin pan and bake for 25-30 minutes or until a toothpick inserted in center comes out clean.
