If you have a couple of black spotted bananas and you don’t know what to do with them, here’s an idea…bake some delicious Banana Chocolate Muffins, that will take only 15 minutes of your time…then 30 minutes let the oven do the trick. All you need is sugar, spice and everything nice, more precisely:
Ingredients– For 12 regular sized cupcakes you need:
130 grams all-purpose flour
200 grams caster white sugar
35 grams cocoa powder (regular or Dutch-processed)
3/4 teaspoons baking powder
3/4 teaspoon baking soda
1/4 teaspoon salt
1 large egg
1 medium sized, mashed ripe bananas
120 ml warm water
60 ml milk
60 ml vegetable oil
3/4 teaspoon pure vanilla extract
paper liners or non stick vegetable spray
First of all I heated my oven to 180 dregrees C (350 dregrees F).
You need 2 large bowls. In the first bowl I whisked together the dry ingredients: flour, cocoa powder, baking powder, bakind soda and salt. In the second bowl I whisked together the wet ingredient: I mashed the banana with a fork then added the egg, water, milk, oil and vanilla extract. Then I added the wet ingredients to the dry ones and I whisked, until completely mixed.
I used an ice cream scoop to fill up the muffin cups about 3/4 full. I placed the rack in the center of the oven and let them bake for about 20 to 30 minutes. To be sure that they are baked, I inserted a toothpick in the center of a cupcake until it came out clean.I let them cool on a wire rack.
You can serve them simple or if you are a fan of Chocolate Frosting or Lemon Cream Cheese Frosting go for it.
