Beef Goulash recipe (Gulyas leves)

        You will discover this spicy and revivant soup served in restaurants and cafes everywhere in Austria, Hungary, Germany and Switzerland. It is the perfect remedy for the cold winter days.

       Below are the steps to obtain a delicious Goulash soup- don’t be shocked by the amount of paprika, because that’s the secret ingredient and it works, I promise you.

Ingredients:
1kg/2lb 4oz braising steak or venison
1 table spoon vegetable oil (I used olive oil)
3 medium onions, diced
4 medium carrots, diced
1 parsley root, diced

1 fresh tomatoe

1 bunch flat- leaf parsley

1 red pepper, seeded and diced

1 green pepper, seeded and diced

1 hot pepper, seeded and diced

4 tbsp sweet paprika
2 tbsp caraway seeds, crushed
60g/4 tbsp tomato purée
3 bay leaves
2 litres/3½ pints good beef stock or hot water
4 potatoes, peeled and chopped into small cubes
flaked sea salt
freshly ground black pepper

1 glass of red wine

soured cream and flat-leaf parsley, to garnish

Preparation method:

Trim the meat and cut it into bite-sized chunks.

Heat a tablespoon of oil in a large heavy-bottomed pan and brown first the onions until they become glassy, then add the beef and paprika and continue to cook until the meat is browned and cover with hot water.
When the meat is half cooked add the peppers, tomatoe, parsley leaves and season it with freshly ground pepper, salt and caraway seeds.

Cook gently for about 30 minutes then add the diced parsley root, carrots, potatoes, tomato puree, wine and bay leaves, stir well, cover the pan and simmer for at least 1 hour until the beef is starting to get tender.

Check the seasoning before serving.
Serve the soup in bowls with a generous swirl of soured cream and a good sprinkling of parsley.
