These cheesy pastry puffs are the best in the world, for me:) and pretty easy to make and bake. What I like about them is that they are extremely tender despite the fact there is no baking powder !
Ingredients for one serving:
– 250 g. grated Cheddar Cheese or any kind of Cheese that has the same consistency
– 250 g. flour
– 1 teaspoon paprika (optional)
– salt
– 200 g. cold butter
– 1 egg yolk
– sesame or poppy or cumin or coarse salt to sprinkle
Method:
Knead a dough of grated cheese, flour, a pinch of salt, 1 teaspoon paprika and butter in flakes (I scraped the cold butter with a vegetable slicer). Make a ball, wrap it in clingfilm and let it rest in the fridge for 60 minutes.
Roll the dough on a floured surface in a sheet approx. 1 cm tall and using a craft knife or a template cut out forms or cut strips.
There is no rule for their shape…let your imagination fly and adapt.
Brush the dough shapes with the beaten egg yolk, sprinkle with cheese, salt, cumin, poppy or sesame.
Preheat the oven to 180 degrees (medium heat).
Place the puffs in the oven and bake for 18-20 minutes until puffed up and lighly golden.
