If you are a carrot cake fan, like I am, then you must love the lemon cream cheese frosting. It’s a simple recipe and it takes only 15 minutes to master.
You need:
- 224 grams cream cheese, at room temperature
- 100 grams unsalted butter, at room temperature
- 230 grams powdered sugar
- 1/2 teaspoons pure vanilla extract
- 1 teaspoon finely grated lemon zest(from about 1 medium lemon)
- 1 teaspoon squeezed lemon juice
In a bowl beat with a hand mixer the butter and cream cheese until creamy. Beat in the sugar, the vanilla extract, lemon juice and lemon zest until fully incorporated and smooth.
