Creme Brulee or Creme Caramel Recipe

Creme Brulee’s tempting secret hides in the contrast between the fragile caramelized topping and the velvety custard underneath.

French meaning for “burnt cream,” creme brulee is optimum served as soon as you caramelize its sugary surface.

 

Ingredients for 4 servings:

For the caramel:

– 100 g sugar

– 2 tablespoons water

 

For the vanilla cream:

– 500 ml. milk or heavy cream

– 1 vanilla bean, split lengthwise

– 4 large eggs

– 70 g sugar

 

Directions:

Preheat oven to 170 degrees C. (slow fire).

Caramelize the sugar with 2 tablespoons water in a pan, without mixing- just turn the dish slightly until the sugar has caramelized. Be careful not to burn the sugar because it will become bitter. When ready, pour it into 5 ramekins.

For the cream, place the milk (or heavy cream), the vanilla bean and its pulp into a medium saucepan set over medium-high heat and bring to a boil. Remove from the heat, cover and allow to sit for 15 minutes.

In a medium bowl, whisk the eggs together with the sugar until well blended. Add the hot milk, a little at a time and mix vigorously.

Remove the vanilla pod and strain the mixture into a bowl. Pour the mixture in the 5 “coated” with caramel ramekins. Place them into a large pan filled with hot water (the water must come halfway up the sides of the ramekins).

Bake until the creme brulee is set, but still trembling in the center, for approx. 50 to 60 minutes. Take the pan out of the oven, remove the ramekins from bain-marie and let them cool. Refrigerate them for at least 2 hours ad up to 3 days.

Caramelize tops and serve: Sprinkle about 1 1/2 tablespoons granulated sugar over each custard. Working with one at a time, pass the flame of the torch in a circular motion 1 to 2 inches above the surface of each custard until the sugar bubbles, turns amber, and forms a smooth surface.
