Croissants with Jam or Chocolate

This dessert is strongly tied to a childhood memory, from when I was 5 years old. I went on holiday with my parents and my mother knowing what a picky child she has, brought some home baked croissants and boy was she right, because I don’t remember eating anything else for a couple of days 🙂

Ingredients
  1. 450g flour
  2. 12g fresh yeast
  3. 20g sugar
  4. 25ml milk
  5. 100g butter (at room temperature)
  6. 2 eggs (at room temperature)
  7. 70g of cream or fat yogurt
  8. 1/2 tsp vinegar
  9. a pinch of salt
  10. 200g thick jam/marmalade/chocolate/turkish delight (I used sugar free plum jam)
  11. nuts/almonds (optional)
Instructions
  1. Sift the flour into a large bowl.
  2. Mix the butter and the eggs until foamy.
  3. In a small bowl mix the yeast, the milk and the sugar, then pour them into the large flour bowl, adding the buttery foam, cream, salt and vinegar.
  4. Knead the dough well, place it in clingfilm and refrigerate for at least 30 minutes.
  5. Spread the dough on an oily surface, divide it into 5 equal balls.
  6. Take one ball at a time and spread it with a rolling pin, then cut it like a pizza into 8 equal pieces.
  7. Place a little jam in the outer area of every slice and roll them.
  8. Place the croissants on a tray lined with parchment paper and bake them for about 20 minutes.
Notes
  1. The croissants are a perfect match for your morning coffee or a glass of milk.
