This dessert is strongly tied to a childhood memory, from when I was 5 years old. I went on holiday with my parents and my mother knowing what a picky child she has, brought some home baked croissants and boy was she right, because I don’t remember eating anything else for a couple of days 🙂

Croissants with jam

Ingredients
- 450g flour
- 12g fresh yeast
- 20g sugar
- 25ml milk
- 100g butter (at room temperature)
- 2 eggs (at room temperature)
- 70g of cream or fat yogurt
- 1/2 tsp vinegar
- a pinch of salt
- 200g thick jam/marmalade/chocolate/turkish delight (I used sugar free plum jam)
- nuts/almonds (optional)
Instructions
- Sift the flour into a large bowl.
- Mix the butter and the eggs until foamy.
- In a small bowl mix the yeast, the milk and the sugar, then pour them into the large flour bowl, adding the buttery foam, cream, salt and vinegar.
- Knead the dough well, place it in clingfilm and refrigerate for at least 30 minutes.
- Spread the dough on an oily surface, divide it into 5 equal balls.
- Take one ball at a time and spread it with a rolling pin, then cut it like a pizza into 8 equal pieces.
- Place a little jam in the outer area of every slice and roll them.
- Place the croissants on a tray lined with parchment paper and bake them for about 20 minutes.
Notes
- The croissants are a perfect match for your morning coffee or a glass of milk.
