I can’t say I love donuts, but once in a while I crave for a homemade crispy donut.

You’ll say I can find a donut shop on every corner in this city, but to find the perfect one takes a little more effort, so I decided to make my very own donut:).  

I know the combination of sour cream and jam sounds a little bit odd, but I can assure you the final result is to die for and each curve is a crispy golden-brown bite.

Ingredients
  1. 500g ricotta chesse
  2. 300g flour
  3. 2 medium eggs
  4. 1 tsp baking soda
  5. 30g vanilla sugar
  6. a pinch of cinnamon
  7. lemon zest depending on your taste
  8. a pinch of salt
  9. 200g sour cream
  10. 250g raspberry jam
Instructions
  1. In a large bowl mix well the ricotta cheese (drained from all its moisture), eggs, salt, vanilla sugar, lemon zest, baking soda.
  2. Add the flour and mix well with a spatula or by hand and let it rest for 10 min.
  3. Using a kitchen scales and a little flour divide the batter into 6 round balls of 120g and another 6 smaller round balls of 40g.
  4. Using your hands make holes in the middle of the big dough balls in order to shape it into a donut.
  5. Heat the oil in a large frying pan and fry the donuts at low heat for 2 to 3 minutes each side until they become golden brown.
  6. Transfer the donuts on absorbent paper.
  7. When they have cooled serve them on a plate with sour cream and raspberry jam.
