Fudgy, Chewy Brownies Recipe

This weekend I had a sweet tooth and decided to put it to sleep with some brownies…fudgy, chewy, deep chocolate ones and it worked wonderfully.

They are easy peasy to make and bake and are a great solution for the world’s greatest problems 🙂

You can store them up to three days, covered, at room temperature.

Ingredients
  1. 115 g unsalted butter, softened at room temperature
  2. 280 g semisweet dark/milk chocolate (I used dark chocolate)
  3. 130 g granulated sugar
  4. 1/4 tsp salt
  5. 2 eggs
  6. 130 g flour
  7. 2 1/2 tbsp cocoa powder
  8. 1/2 tsp instant espresso powder
  9. seeds from ½ vanilla pod or ½ tsp pure vanilla extract
  10. coconut flakes for presentation (optional)
Instructions
  1. Preheat your oven to 180 C degrees.
  2. Line a 20x20cm square baking pan with parchment paper. Let the sides of the parchment a little longer so you can easily lift the brownies from the tray.
  3. In a medium saucepan melt together the butter and chocolate over medium-low heat. Let it cool down.
  4. In a medium bowl mix well together the sugar, eggs, flour, cocoa powder, espresso powder, salt, vanilla and cooled melted chocolate mixture.
  5. Spread the resulted mixture in the baking pan and let it bake for 40 to 45 minutes.
  6. Allow them to cool down before cutting into desired shapes and sizes and drizzle some coconut flakes before serving or combine it with a scoop of vanilla ice cream.
