I have been a pizza fan all my life. In childhood my mother used to cook us pizza, but I can’t say I was mad about the thick crust she made.

I was rather the admirer of the thin and crispy crust my aunt made.
Believe me, once you realize how simple and tasty the homemade pizza dough recipe is you will quit deliveries.

Pizza Margherita Recipe with Homemade Dough

FOR THE CRUST
  1. 500 g white bread flour or Tipo '00' flour ( you can use whole wheat flour for a quarter of the quantity )
  2. ½ teaspoon fine sea salt
  3. 7 g dried yeast sachet
  4. ½ tablespoon golden caster sugar
  5. 2 tablespoons extra virgin olive oil
  6. 325 ml lukewarm water
FOR THE SAUCE
  1. homemade tomato sauce or 500 g good-quality tinned plum tomatoes
  2. hot chili pepper or sweet chili pepper (paprika) depending on your taste
  3. 3-4 peeled garlic cloves
  4. sea salt
  5. freshly ground black pepper
  6. 1 bunch fresh basil , leaves picked and torn
  7. FOR THE PIZZA
  8. 125 gr mozzarella cheese, sliced
  9. 10 fresh basil leaves
  10. 2 tomatoes, finely sliced
CRUST
  1. Combine the warm water, sugar, olive oil and yeast in a bowl and leave for about 5 minutes.
  2. Pour this mixture in the middle of the salty flour and mix to form a dough.
  3. Knead for a few minutes until you have a smooth, springy dough.
  4. Cover the dough in flower, place it in a bowl, cover it with a damp cloth and let it rest in a warm room for about 40 minutes.
SAUCE
  1. Mix the sauce ingredients together in a blender until smooth.
  2. Preheat the oven to 200 C degrees.
  3. Divide the dough in half. Roll out each piece into a thin crust, and transfer to a pizza pan.
  4. Top with the sauce, mozzarella and thin slices of tomatoe.
  5. Insert into oven and bake for about 30-40 minutes.
  6. Top with fresh basil leaves.
